Instructions
  1. Wash the tomatoes and cut in halves. Add salt, pepper and drizzle with a little olive oil. Grill in the oven for 15 mins.
  2. Cook the cod fillet in a frying pan with a little olive oil for 5 mins on each side & add pepper.
  3. Remove the bone from fresh anchovy and soften the fillets in a saucepan with butter for 3/4 mins each side. Add 1 TBSP of lemon juice and chopped parsley. Pour the sauce over the cod.
  4. Serve the grilled cod with anchovy butter along with grilled tomatoes.
